Since that day, I have started visiting this store as often as time allows. I'm talking about Assurd, a pub, brewery and pucceria in Potenza's old town. In fact, the social cooperative ``Ricco dentro'' was founded in November 2013 as a result of 10 years of experience between its two managers in a project implemented by the Italian Association for Down Syndrome (AIPD). This experience led to a new "adventure": the creation of "Assurd". Two young people with Down syndrome have been involved in running the pub since the beginning, and now one of the young people is employed full-time by the co-op, while the other three take turns running the pub. The idea for the pub was born out of a desire to create a pathway to independence, especially for people with Down syndrome. The purpose of AIPD's work is, in fact, to provide people with the tools to live an independent life, simplifying and making their everyday lives easier and more accessible. When we set up the pub, and therefore the cooperative ``Ricco dentro'' (dedicated to Riccardo'Ricco' Biazzo), we were faced with red tape and complex problems. Fortunately, at that time, a mechanism that can be appropriately defined as ``horizontal solidarity'' was put into motion. That is, thanks to the "free" cooperation of experts in this field (food technologists, consultants, safety engineers, cooks, bricklayers, etc.), it became possible to overcome the obstacles posed by bureaucracy. be. In this way, among other things, it was possible to open the store in a relatively short period of time and without using public funds. This is precisely why it is possible for other people to set up businesses with the aim of actually achieving their goals, and not just with the aim of "getting money", but only with the cooperation of engineers in this field. This is a beautiful example of a ``virtuous cycle'' model. Not pursuing funds or projects is a deliberate choice and winning strategy for Assurd's youth. The conviction they have gained and the message they want to convey is that their work can lead to a stable situation, both for themselves and for the young people involved. Of course, they are open to the possibility of cooperation or synergies, or of participating in projects with other partners. But what does the "aSsUrd" restaurant offer tourists and patrons? The name Assurd has the letters SUD prominently written on it, indicating that it is a restaurant that serves traditional Lucanian cuisine. It is no coincidence that the poster for the movie ``Welcome aSsUrD'' was used for the opening. A connection to the South, and specifically to the region, has been a hallmark of the restaurant from the beginning. These include red eggplants from Rotonda, peppers ``Kurski'', pecorino cheese, and flours such as ``Senator Cappelli'' and ``Carosella.'' The main product is ``Pepuccia'', a handmade naturally fermented sandwich made using the recipe of ``Nonna Peppa'', a woman from the village of Accettura in the province of Matera. Currently, there are two variations of the classic recipe: one with millet and the other with occasional ``peperoni kruschi''. Over the past year, aSsUrd has undergone a minor change from a pep pucceria to a list pub. In fact, thanks to the addition of a chef to the staff, the menu now offers dishes that blend tradition and innovation. Examples include homemade fresh pasta, especially strastinati, and pepizza made from sandwich recipes. Last October, on the occasion of 'giornata del mangiar bene' (Delicious Eating Day), on the recommendation of Gambero Rosso's food and wine guide, the Assurd group visited the province of Siena to get to know our traditional cuisine. Above all, we exchanged our realities and experiences with local communities who are beginning the process of launching similar activities. Assurd is a very pleasant meeting place where you can spend an evening of great music and culture with relatives, friends and acquaintances while drinking great beer. Assurd's summer program was very beautiful and wide-ranging, with each week a program of excellent groups performing national and international music, entertaining the audience and selling out. This winter season, too, for the lucky few who can find a small space at the venue, Assurd will continue to build close collaborations with various cultural associations in the region, showcasing books and inviting writers and directors. Places are places that generate wealth and jobs, not just their owners. Restrictions and rationalizations not only reduce enthusiasm and passion, but also mean huge costs that are not offset by revenue. Access to credit is now a mirage. As such, the choice to serve high-quality food at average prices does not necessarily help heal the initial investment deficit. Assurd Absurd is one example. It was named in order to exorcise the hardships of the past and to give hope to those who are trying to walk a similar path.Pucceria in Potenza opens with the support and concrete assistance of those who believed in this adventure. We are surrounded by dozens of friends and relatives. But everything else took effort. A lot of bureaucracy, a lot of restrictions. Even the name of the restaurant... It is true that the law must protect consumers from risks arising, for example, from poor practices in the preservation and serving of food, but those who are determined to create jobs and wealth It is also true that we must incentivize and support those who do this, especially young people, those who seek integration, and those who seek to preserve and disseminate traditions.
